Thai pork lettuce wraps

Thai Pork & Lettuce Wraps

This is the perfect recipe for when you want big flavours – FAST. It’s an amazingly simple dish and works wonderfully if you need to feed a big group of people. There’s no cutlery required either – grab a lettuce leaf and get scooping!

The thing I love the most about this dish is how convenient it is. It’s a no-fuss meal – you don’t need to dirty up your plates! It’s an amazing way to minimise your carb intake while still feeling delightfully full. The pork has so much body to it; it doesn’t need bread. The light crispness of the lettuce is the perfect contrast, in both taste and texture, to the spicy pork mix.

We’ve got five basic tastes.

  • Bitter
  • Salt
  • Sweet
  • Sour
  • Umami

Everything that we eat touches at least one of these flavour points. Complex dishes often marry these margins together, e.g. curry. But when we take that first bite, certain flavour points stand out more to us than others. For this recipe, we’d say these are:

  • Bitter
  • Salt
  • Sweet
  • Sour
  • Umami

Ingredients

  • 1 tbsp Sunflower oil
  • 1 whole Iceberg lettuce
  • 250 g Pork mince
  • 1 whole Red chilli finely chopped
  • 1 inch Ginger finely chopped
  • 2 1/2 tbsp Soy sauce
  • 1 tbsp Lime juice

Instructions

  • Prep your salad by washing and drying the lettuce leaves
  • Get the hob onto a medium flame and heat the oil. Toss in the onions and stir for 1-2 minutes. Add in the mushroom, chilli, ginger, and garlic. Cook for a further 1-2 minutes.
  • Plop in the pork mince and turn the heat to high. We want to cook the meat fast. Stir the mince in thoroughly for 1-2 minutes or until the pork starts to brown.

Notes

The pork has a sweet and salty flavour, which contrasts beautifully with the sharp tang of the lime juice. Lettuce complements the dish wonderfully with its delicate sweetness. For such a simple dish, it hits 4/5 flavour points. Pretty impressive, I’d say!
